Summer Salads

The summer’s scorching heat, which requires a skimpier-than-normal wardrobe in order to not melt, makes the idea of fresh summer salads for lunch more appealing than ever. The building in which I work part-time, CSI (Centre for Social Innovation), helps make this easier by offering a salad club once a week. It’s a fabulous idea! Everyone brings any two items to contribute to the scrumptious smorgasbord and every week one can concoct a different but equally delicious salad.

Some of the ladies in my office area were inspired. So now in addition to the “official” CSI salad club, we have a mini one of our own. Not as elaborate, but equally delicious and healthy.

And narrowing even farther down, my coworker and I often make our own salads for just the two of us. Here are a choice selection of some of our best:
